Crispy and Flavorful Tex-Mex Delight

If you're a fan of Tex-Mex cuisine, then you're in for a treat with this delicious recipe for Air Fryer Chimichangas. These crispy and flavorful stuffed tortillas are a popular dish that is traditionally deep-fried. However, with the help of an air fryer, you can achieve the same level of crispiness and flavor without the excess oil.   • 1 pound ground beef or shredded chicken
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup refried beans
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 8 small flour tortillas
  • Cooking spray

For the Toppings:

  • Sour cream
  • Salsa
  • Guacamole
  • Chopped fresh cilantro
  • Lime wedges

Preparation Time: 15 minutes Cooking Time: 20 minutes Total Time: 35 minutes


Step 1: Prepare the Filling

  1. In a skillet over medium heat, cook the ground beef or shredded chicken until browned and cooked through.
  2. Add the diced onion, minced garlic, chili powder, cumin, paprika, salt, and pepper. Stir well to combine.
  3. Cook the mixture for an additional 3-4 minutes until the onions are tender and the flavors have melded together.
  4. Remove the skillet from heat and stir in the refried beans and shredded cheese until well incorporated.

Step 2: Assemble the Chimichangas

  1. Lay out a flour tortilla on a clean surface.
  2. Spoon a generous portion of the filling onto the center of the tortilla.
  3. Fold the sides of the tortilla over the filling, then roll it tightly to form a burrito-like shape.
  4. Repeat the process with the remaining tortillas and filling.

Step 3: Air Fry the Chimichangas

  1. Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  2. Lightly grease the air fryer basket with cooking spray.
  3. Place the chimichangas in the air fryer basket, making sure to leave space between them.
  4. Lightly spray the chimichangas with cooking spray to help them achieve a golden and crispy texture.
  5. Cook the chimichangas in the air fryer for 10-12 minutes, flipping them halfway through, until they are golden brown and crispy.

Step 4: Serve and Enjoy!

  1. Once the chimichangas are cooked, carefully remove them from the air fryer.
  2. Serve the chimichangas warm with your choice of toppings such as sour cream, salsa, guacamole, chopped cilantro, and lime wedges.
  3. Feel free to customize your chimichangas with additional toppings like diced tomatoes, sliced jalapeños, or shredded lettuce.
